Peach Pico de Gallo


Peach Pico de Gallo

A light fresh salsa that pairs well with white fish, pork, or just some fried tortilla chips

  • 2 cups Diced white peaches
  • 1/4 cup Diced Vidalia onion
  • 1/4 cup Chopped cilantro
  • 3 tbsp Rice wine vinegar or lime juice
  • Salt and pepper (to taste)
  1. Mix

Slightly under ripe peaches work better for this, the acidity in the vinegar or lime juice will soften them as it sits…for best results, make several hours before serving to allow it a bit of time to marinate.
