Tempura Frog Legs

A light, crisp batter works well with these predictably tough cuts

  • smoker
  • deep fryer

Tempura Batter

  • 1 cup flour
  • 1 tbsp baking powder
  • 1/2 cup soda water
  • 1 dash salt and pepper

Cilantro Aioli

  • 1 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lemon juice
  • 1 tbsp chopped garlic

Tempura Batter

  1. mix dry goods first

  2. add soda water until thinner than pancake batter, but thicker than eggnog

Cilantro Aioli

  1. mix all ingredients, salt and pepper to taste
